Aces/SWOTL-a-like

I'm not sure how many of you are old enough to remember LucasArts' flight sim series, ending in Secret Weapons of the Luftwaffe, but I suspect most of you are probably old enough to remember Aces Over Europe/Aces Over the Pacific.
So basically I'm looking for opinions on what's currently the best flight sim. Scaleable realism and mouse or keyboard control are a serious plus.
Also, I'm going to more or less demand the ability to fly a bomber. I never really got over it when they stopped letting me fly a B-17 and man the guns to fight off interceptors after SWOTL. The Aces series wouldn't even let you hop in as a rear gunner on two-seater attack aircraft.
