Ok, it's 3am, I'm bored and I was just thinking a really stupid thought...
When people are reading through these posts, and you see an edited post, do you look at the post and try to figure out where it's been edited? I keep catching myself doing it, and I want to know if this is normal and as annoying for other people, or whether I am suffering from some kind of impulsive syndrome

Err - generally not... You might need some help there dude
Out of curiosity, how do you know what to look for? IE. tell edits from original?

And whats up with the dates on the forum? It tells me today is the second, when i know it is the first...

Two things.
1) What timezone are you in, and what do you have the forum's timezone set to?
2) Those timestamps don't always work, I've noticed it with all forum engines except phpBB.

Not to drudge up an old topic, but I think you have to edit your post after someone else has posted (or at least after someone else has viewed it) for that timestamp to show up. I could be wrong, but I've noticed at HLP that you can edit posts immediately after making them and you almost never get an "edited on" stamp.
